Helping Wagamama create its most sustainable restaurant
The big challenge
Wagamama had an ambitious sustainability vision for its new restaurant in Clarks Village, Somerset.
They asked us to formally assess the restaurant against the SKA environmental standard, which measures the sustainability of non-domestic fit-outs across a comprehensive set of issues, from energy and water use to indoor air quality and staff wellbeing.
Our people-shaped support
As we’d previously supported Wagamama with a ‘dry run’ of the SKA process by retrospectively assessing its West Bridgeford branch, the project team was already up to speed and had a useful benchmark of its sustainability efforts.
For the Clarks Village SKA assessment, we collaborated with the fit-out project team, including Rockshaw and Meridian Design and Build, to gather all the necessary data and evidence needed for a rigorous assessment.
Our experts:
- defined which measures should be within the scope of the assessment in order to achieve a SKA Gold rating – we defined 74 potential measures in total
- ensured stakeholders, from lighting suppliers to acoustics specialists, understood what the measures were, and how to achieve them
- assessed whether the measures had been met upon project completion
The big impact
To earn a SKA Gold rating, Wagamama needed to achieve at least 56 out of 74 potential measures. We were delighted that Wagamama achieved a whopping (official technical term) 66! This is a tremendous achievement, which establishes Clark Street as the company’s most sustainable restaurant to date.
Stand-out measures include an all-electric cookline, heat pumps supplying all space and water heating, and all timber is FSC certified. Many innovative, sustainable materials were used, including recycled chopsticks for tabletops!
Importantly, we ensured that the SKA assessment wasn’t simply a box-ticking exercise: it helped ensure that good practice was embedded throughout the fit-out and will be carried forward into future Wagamama branches.
